Fred Carret and Gary Strack Opened the Central Kitchen On May 1st, 1998. After Surviving Spectacular Flame-Outs in Graduate School and Drawing Courage From Many Great Drunken Meals in France, Spain, and Italy, the Guys Decided To Renovate A Take-Out Wings Joint in Central Square and Start A Restaurant Devoted To the Rustic Mediterranean Style They Had Come To Love. the Construction Disasters Alone Almost Killed the Project With Both the Architect and the Contractor All But Abandoning Them As Incompetents. They Were Saved On Weekends and Late Nights by the Builders Mark Lewis and Carl Sanduval, and the Architect Mark Strong Who Fashion Themselves As Construction Versions of Saint Jude Thaddeus, the Patron Saint of Lost Causes. Central Kitchen Bobbed Along for A Couple of Years Winning Some Fans With A Gritty Urban Style and Some Pretty Spectacular Food by Gary and the Boys in the Kitchen. the Operation Didn't Really Take Shape Until Steve Schran, Wine Savant and One of the Initial Investors, Decided That If They Got A Liquor License and Opened Up the Enormous Room (Www.enormous.tv) Then Maybe the Three Partners Wouldn’t Have To Go Back To Academics As A Career. After That Fred and Gary Let Steve Do All the Thinking. Currently, Fred Lives in the Costa Brava, Above Barcelona, Rebuilds 14th Century Farmhouses and Phones-In His Contributions. Steve and Gary Actively Run the Restaurants and Try Not To Make the Same Mistake Twice.
